French Freeze-Dried Corn Quiche
This freeze-dried corn quiche recipe will assuredly tempt you with its French quiche charm. Thanks to its nature as brunch food or a light dinner, you can enjoy this classic French recipe with a twist – freeze-dried corn – at any time of day, every day.
Ingredients:
1 pre-made pie crust (9-inch)
1/2 cup freeze-dried corn
4 large eggs
1 cup heavy cream
1/2 cup grated Gruyère cheese
1/4 cup finely chopped shallots
2 tablespoons butter
Salt and pepper to taste
Nutmeg, a pinch for added flavor
Fresh chives, chopped for garnish
Preparation:
Step 1: Rehydrate the Corn
Now, we want to rehydrate these from a freeze-dried state to their plump and chewy self. First, place the corn in a cereal bowl or container, add just enough warm water to cover the bottom of the container, and soak for about 5 minutes. Then, drain the corn and let them dry thoroughly before storing until needed.
Step 2: Prepare the Crust
Turn your oven on to 375°F (190°C). Fit the pie crust to your pie dish, crimp the edges and your pie dish is now ready.
Step 3: Sauté Shallots and Corn
Melt butter in a skillet over medium heat. Fry shallots until translucent and soft. Add rehydrated corn and cook for further 2-3 minutes, stirring occasionally, seasoning with salt, pepper and a pinch of nutmeg.
Step 4: Combine Eggs and Cream
Meanwhile, in a mixing bowl, whisk the eggs and the heavy cream until blended, and then mix in the grated Gruyère.
Step 5: Assemble the Quiche
Spread out the sautéed corn and shallots evenly across the bottom of the pie crust. Pour the egg and cream mixture over the corn and shallots to cover them evenly.
Step 6: Bake
And bake in the lower third of the preheated oven for 35 to 40 minutes, until the quiche is set in the centre and golden brown on top of the crust.
Step 7: Garnish and Serve
Let the quiche cool before cutting and garnishing with some chopped fresh chives for a pretty colour and a fresh flavour.
